This savory hors d'oeuvre is a breeze to make. The rich feta, sweetened slightly with honey, becomes candy-like on the outside and custard-like in the middle. We paired it with rustic crackers and thyme roasted heirloom tomatoes, but it would also be great served with roasted beets or pickled vegetables, or pita bread. 

Serve sprinkled with fresh thyme, alongside of your favorite wine!

Serves 4-6

Ingredients:

One 8 oz. slab Greek feta, blotted dry

2 Tbsp + 1 Tbsp extra virgin olive oil

1 Tbsp Georgetown Pantry Supply raw honey

3 heirloom tomatoes, cut into 1/4 in. pieces

3-4 sprigs fresh thyme

Pinch of salt and pepper

Pita bread or rustic crackers

Instructions:

1. Preheat oven to 400°F. In a small baking dish, combine chopped tomatoes, 1 Tbsp olive oil, salt and pepper, and fresh thyme. Bake for 15-20 minutes, until they are softened but still hold their shape. 

2. While the tomatoes are baking, begin preparing the feta. In a small oven-to-table dish, place the feta in and cover with your remaining 2 Tbsp olive oil. Bake in your preheated oven, alongside of the tomatoes (of after the tomatoes), until the cheese is soft and springy to the touch but not melted, about 8 minutes. 

3. Preheat the broiler. Use a pastry brush to brush your honey over the top of the feta. Broil until the top of the cheese browns and begins to bubble. Season with black pepper.  Serve immediately with pita or crackers, and your roasted heirloom tomatoes.
